New Year, New You recipes: Roasted Brussels sprouts, cantaloupe salad

Roasted Brussels Sprouts w/ Cranberries

3 lb Brussels sprouts/ halved ( rinsed, and trimmed)

3T olive oil

1T kosher salt

½ tsp fresh ground pepper

½ cup dried cranberries

Drizzle sprouts with olive oil add salt and pepper, bake at 425 for 20-25 min,

Stir in cranberries when done. (can also drizzle  Fresh Orange Wedges Over, and or Orange Zest) . I also like to add in some Toasted Pecan halves.

Cantelope, Red Onion and Walnut Salad

¼ c fresh orange juice

1T fresh lemon juice

1 ½ T raspberry vinegar

3T extra virgin olive oil  

Salt and Fresh Ground Pepper – combine first 3 ingredients, slowly add oil, then season

1 3 lb cantaloupe

1 small red onion

2 cups arugula

1 cup chopped walnuts, toasted
