BISMARCK — Who wouldn't want to try pickled state fish? In North Dakota, pickling northern pike can be a smooth process.
The canning process doesn't involve actually cooking the northern pike, and starting with frozen fish is recommended.
Cayla Bendel, R3 coordinator, shares Hank Shaw's recipe. The brining time is 12 hours, so Bendel says be sure to take that into account.
Ingredients per pound of pike
Brine:
- 1c kosher salt
- 4c water
Pickling solution:

- 2c apple cider vinegar
- 1/3c sugar
- 2 tsp pickling seasoning
- 2 bay leaves
- Peel of lemon
- 1 medium red onion, thinly sliced
